Making Crockpot Lasagna

When I tell people I make lasagna in my crockpot, they always look at me and ask if I’m sure. They can’t believe that their crockpot can be used to make this wonderful dish.

This actually began as an experiment and has since become a family favorite.

I begin with ground turkey. The packages of turkey are just over a pound. I brown the meat with chopped onion. If you like other seasonings with the meat, this is the time to add them in. Once the meat is brown I add in one jar of Prego sauce (don’t throw away the jar). You can use any brand of sauce or even make your own.

Once the meat is done, it’s time to create the lasagna casserole. I spoon a bit of the meat sauce on the bottom of the crockpot. I then use regular lasagna noodles. Do not buy the type that are no boil. You want regular lasagna noodles. I generously coat the noodles with ricotta cheese, then break to fit the crockpot. I cover the bottom of the crockpot, over the sauce with the noodles. Place the noodles cheese side up.

I chop up one head of cauliflower and one head of broccoli. I dice a few zucchini. I also wash half a bag of spinach leaves. I put a generous layer of the mixed vegetables on top of the noodles. I top this with Italian blend cheese. Just generously sprinkle on top of the vegetables. Read the rest of this entry »

BBQ Pulled Beef Sandwiches

This BBQ pulled beef sandwich recipe is especially great to make in the fall and winter seasons, but will make your tummy happy year round. Using a crock pot not only makes the meat melt in your mouth tender, it makes this a no brainer for a weekday meal when you are rushed for time. For me, my wife and five year old son, there is usually a nice amount of left overs for the next day, when this has aged and is twice as good!

What you want to do is get yourself a nice three pound bottom rump roast. Take a frying pan big enough to hold the roast and get enough oil in the pan to just coat the bottom. Heat it to medium high. While waiting in that to come up to temperature, get the roast unwrapped, rinse it real quick under cold tap water then pat it dry. Then just take your favorite salt and pepper and rub it right in, until the entire outside of your rump roast is completely coated.

Go ahead and get your bottom rump roast started browning up in the pan. You want to pay good attention to it so you don’t burn it, but get a good deep browning on, okay? While that is working it’s magic, coarsely shop a couple medium yellow onions. I also like a couple seeded and chopped jalapenos, a couple stalks of chopped celery and a seeded and chopped green bell pepper ready with my onions, but these can be optional. Fresh garlic and rosemary to taste are great items here, too. Read the rest of this entry »

Enjoy a Hot and Spicy Meal With Crockpot Chili

Crockpot chili is probably the easiest chili dish you can do at home. It actually gets its name from the type of pot used to cook it, the crockpot. What makes this dish very easy to prepare and cook is that the pot can be cleaned easily so you do not spend too much time in the kitchen but instead, you get to bond more with your kids, family, friends and other guests.

The crockpot chili is also often referred to by many people as a dish where you can just throw everything into the pot and all you have to do is to wait until it is cooked.

The first thing you have to do in making crockpot chili is to prepare your ingredients. These would include some ground beef, kidney beans, crushed tomatoes, onions, chili powder, tomato sauce, Worcestershire sauce and some red pepper flakes. You will also need some sugar as well as your frying pan and, of course, crock pot.

Your ground beef has to be cooked first before you add them up into your chili. Aside from that, your onions also have to be cooked before adding them up to your crockpot chili. Once those are all set, you can add the rest of the ingredients into your crockpot chili – crushed tomatoes, pepper flakes, tomatoes sauce, chili powder, kidney beans and Worcestershire sauce. You have to mix them well to make sure that all ingredients are blended with each other. Read the rest of this entry »
